What's Cooking Wednesday 3/10

Cream cheese chicken (slow cooker)

Ingredients:
2-3 boneless skinless chicken breasts
Salt and pepper (to taste)
2 pkg. dry Ranch or Italian dressing mix (we usually only use one)
1 can cream of chicken soup
8 oz. cream cheese – cut into cubes (I use the 1/3 less fat kind)
½ c. chicken broth

Directions: Brush chicken with butter and sprinkle with salt and pepper. Place in crock pot and sprinkle 1 pkg. dry mix over all. Cover and cook on low for 6-7 hours. About 45 minutes before serving, add soup, second packet of dry dressing mix, cream cheese, and chicken broth. Cook until smooth.
Serve over rice or pasta.



This one is similar but with pork chops and it's yummy, too...

Creamy Ranch Mushroom Pork Chops
Ingredients:
4 boneless pork chops
1 packet ranch seasoning
1 can cream of mushroom soup
1 soup can chicken broth
1 block cream cheese

Spray a crockpot with cooking spray, and put all ingredients but cream cheese in. Cover, and cook on low "all day" (At least 8 hours). Before serving, stir in cream cheese until melted. The sauce is also delicious with veggies!

I was given the Baby’s First Food’s Journal to Review. I love the details in this book and how it is broke down into categories. The neat thing about this is not only do you have something to keep with your baby book to give to your child someday but it is wonderful for leaving with a sitter, family member, or anyone who might need to feed your baby yet has no idea their likes and dislikes. I have already used the recipe section several times. I mean how many times have you been at church, a friends house, or somewhere and found something your child really like. Even more how often have you read a recipe and thought this would make a great one to try? Well now you just write it in the recipes section of the book and have it handy. Here is one I have already added that I have to try:
Teething Biscuit Recipes - Vanilla Teether Shapes (DAIRY FREE)
1 egg, beaten
4 oz (1/2 cup) sugar
1/2 tsp vanilla
4 oz (1 cup) flour

Preheat the oven to 325 deg F, 160 deg C.
Place the egg in a bowl and stir in the sugar and vanilla.
Add the flour and stir in, until the dough is stiff.
Roll out on a lightly floured surface, then cut into shapes.
Allow to stand for 12 hours (it's a good idea to make these in the evening then leave the dough overnight).
Bake until golden and hard.
